Ingredients
- 1/4 Cup cooked quinoa
- 1 cup chicken stock for cooking quinoa & leeks
- 1 leek, white and light green parts
- 1 cup of Tomatoes
- 1/2 lemon juiced
- tsp mustard
- 8 oz Grilled Chicken
- 80G /1 cup arugula or spinach
- 1 oz feta cheese
Directions
- cook quinoa using stock 2parts liquid to 1 part quinoa (
- in another pan sautee leeks til softened
- add stock simmer until leeks are tender
- heat to low: add tomatos, lemon, mustard, season s&p
- add quinoa until heated through
- Toss with Feta & Chicken while warm
- combine with Arugula
